  • eggsIngredients
    4 egg yolks
3 and 1/2 tsp. lemon juice
    1 pinch ground white pepper
    1/8 tsp. Worcestershire sauce
    1 tbsp. waster
    1 cup butter, melted
    1/4 tsp. salt
    8 eggs
    16 Canadian bacon slices
4 Italian 5 grain baguettes (sliced)’
    2 tbsp. butter, softened
  • Directions
To make Hollandaise: Fill the bottom of a double boiler part-way with water. Make sure that water does not touch the top pan. Bring water to a gentle simmer. In the top of the double boiler, whisk together egg yolks, lemon juice, white pepper, Worcestershire sauce, and 1 tbsp. of water. Add the melted butter to egg yolk mixture 1 or 2 tbsp. at a time while whisking yolks constantly. If hollandaise begins to get too thick, add a tsp. or two of hot water. Continue whisking until all butter is incorporated. Whisk in salt, remove from heat. Place a lid on pan to keep sauce warm.

Preheat oven to 350 degrees F. Toast sliced baguettes and heat ham for 10 minutes. Poach eggs in poacher pan for 7 minutes. Place 2 slices of bread on each plate, top with tossed greens and 3 slices of ham on the side immediately!!! ENJOY….
